Garlic Butterbean Mash with Chaloner Green Olive Tapenade

Garlic Butterbean Mash with Chaloner Green Olive Tapenade

Not only is this quick and easy side dish delicious, it’s healthy too. It’s the perfect accompaniment to lamb chops, chicken or a juicy steak.

Ingredients

2 tins butter beans

¼ cup Chaloner olive oil

1 garlic clove, crushed

Zest of 1 lemon plus 1 tablespoon juice

2 sprigs fresh rosemary

2 tablespoons Chaloner green olive tapenade

Salt and pepper to taste

Method

  1. Drain and rinse the beans and put to one side.
  2. Heat the olive oil in a saucepan over medium heat and add the garlic, lemon zest and rosemary. Cook this very gently for about two minutes, ensuring the garlic doesn’t brown.
  3. Add the beans and stir to mix through. Using a masher, squash down the beans until you have a lumpy mash mixture.
  4. Stir in the lemon juice and the Chaloner Season with salt and pepper to taste.
