Garlic Butterbean Mash with Chaloner Green Olive Tapenade
Not only is this quick and easy side dish delicious, it’s healthy too. It’s the perfect accompaniment to lamb chops, chicken or a juicy steak.
2 tins butter beans
¼ cup Chaloner olive oil
1 garlic clove, crushed
Zest of 1 lemon plus 1 tablespoon juice
2 sprigs fresh rosemary
2 tablespoons Chaloner green olive tapenade
Salt and pepper to taste
- Drain and rinse the beans and put to one side.
- Heat the olive oil in a saucepan over medium heat and add the garlic, lemon zest and rosemary. Cook this very gently for about two minutes, ensuring the garlic doesn’t brown.
- Add the beans and stir to mix through. Using a masher, squash down the beans until you have a lumpy mash mixture.
- Stir in the lemon juice and the Chaloner Season with salt and pepper to taste.
