Chaloner Wild Blossom Honey Eggnog

This traditional festive drink with all its Christmassy flavours is sure to put you in the yuletide mood.

Ingredients

2 litres full cream milk

4 eggs, lightly beaten

4 tablespoons Chaloner wild blossom honey

1 teaspoon ground nutmeg

1 teaspoon ground cinnamon

½ teaspoon salt

1 tablespoon vanilla essence

375ml whisky or rum (you can leave this out if you do not want to make it alcoholic)

Method:

  1. In a deep saucepan combine the milk, eggs, honey, nutmeg, cinnamon, salt and vanilla essence. Bring to a gentle simmer over medium heat, stirring constantly for about 5 minutes – take care not to heat too much as the eggs will split from the mixture.
  2. Remove from the heat and stir in the liquor of your choice.
  3. Chill in the fridge for at least an hour before serving.
  4. Serve in individual glasses topped with a sprinkle of ground cinnamon.
