When you look through this recipe you will notice that there are no official Chaloner products in it. This isn’t a mistake. For those of you who have been lucky enough to visit us at Falcon’s Nest Farm, you will know that we have an abundance of lemon trees and we have decided to start incorporating some recipes that include the king of citrus. Our initial plan was to make some sort of gin cocktail, but when we saw that we were in for a rather chilly Christmas all over South Africa we decide we had to make some mulled wine.
2 lemons (lovingly picked from the Falcon’s Nest Farm lemon trees), thickly sliced, deseeded
2 oranges, thickly sliced, deseeded
1 star anise
3 cinnamon sticks
2 thick slices of ginger, peeled
5 cardamom pods
250 grams castor sugar
2 bottles red wine
- Stud some of the orange slices with the cloves. Place the lemons, oranges, star anise, cinnamon sticks, ginger, cardamom pods, caster sugar and water in a stainless steel pot and bring to the boil with the lid on for about 20-30 minutes.
- Add the port and red wine and heat until you see steam rising; make sure the mixture does not begin to boil. Heat for five minutes and then ladle into glasses to serve.
